Years ago if you would have told me I would be eating squash as a snack, I would never would have believed you! I am huge on eating my veggies but squash has never been on my a-list before I discovered a banging way to cook with it. Baked quash is probably one of my quickest snacks to make that actually require cranking the oven on. This recipe is also Kaleb approved! Here is my pinterest recipe for the month of April: Baked Squash(although it came from me and is not currently on pinterest—but we can change that, right?).
With minimal prep time, this baked squash is perfect for us super busy moms! Let’s face it, we can’t always be on top of every aspect of our lives. When I am feeling overwhelmed and on the verge of losing the last bit of sanity that remains, I stop going over board. By switching to simple meals and snacks such as baked squash, I don’t lose my bonkers and the kids stay fed. So, let’s get into it!
- Butter or pam
- Basil (Trust me, it is delicious! Basil brings out the flavors of the squash really well!)
- Extra virgin olive oil
- Coat a pan with butter or cooking spray.
- Pre-heat oven to 350 degrees.
- Slice squash (I find the thinner the slices, the tastier. IT also helps a lot if they are all around the same thickness.)
- Lay out squash slices onto the pan without overlapping.
- Drizzle the squash with olive oil.
- Sprinkle some basil and salt and pepper to taste.
- Bake for 10-15 minutes.
Not only is this super simple to make, my toddler eats it! He has become quite the picky eater and I cannot even be mad at him (I am way worse). I am elated that I discovered a way of re-creating a veggie to fit his taste buds. He is constantly running around begging me to make baked squash!
